    Our most personal drink. Espresso pulled long, with house-made vanilla date syrup, a ribbon of condensed milk, and a dusting of toasted cardamom. Sweet, familiar, and quietly addictive. Named for what it does — it stays with you.

A curated progression through five or six serves — designed to show the full range of specialty coffee. Available for two to eight guests. Booked through reception or the Third State team.

    A pour-over brewed from the current featured origin. No milk, no addition. The coffee speaks first.

  • II · Espresso — Straight

    Espresso

    Our house espresso pulled to order. Served with a small glass of still water. A moment to reset and pay attention.

  • III · Cortado — Craft & Milk

    Milk

    Espresso with steamed whole milk. Equal parts. A study in how the right milk transforms the same shot.

  • IV · Closing — Dallah Espresso

    Closing

    The seasonal single-origin, served as a short espresso in a small vessel. A quiet finish.

Behind the Menu

Our Supply Chain

We know exactly where everything in your cup and on your plate comes from — because we chose it that way.

Our coffee is roasted locally, in small batches, by roasters based right here in the UAE. Our milk comes from farms in Meliha, Sharjah. Our honey is harvested from Wadi Al Dhaid. Our chocolate is crafted by an Emirati chocolatier, custom-blended to our flavor profile. Our bakery items come from a home-grown local business, made in small batches rather than mass-produced.

Nothing here is generic. Every supplier is one we've met, chosen, and trust — because good coffee should come with a story you can actually verify.
